Mexican Beef Skillet

Ingredients

  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 1 large yellow onion
  • 2 large bell peppers
  • 1 lb ground beef
  • 1 tbsp homemade taco seasoning
  • 1 cup tomato sauce
  • 1 can green chiles
  • 1 can black beans
  • 1 cup quick-cooking brown rice
  • 1 cup beef broth
  • 1 cup Mexican shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and chopped onion, sauté until softened.
  3. Stir in diced bell peppers and cook for a few more minutes.
  4. Add ground beef and cook until browned, breaking it up as it cooks.
  5. Mix in taco seasoning, tomato sauce, green chiles, and black beans.
  6. Add quick-cooking rice and beef broth, stir well.
  7. Bring the mixture to a boil, then reduce heat to low.
  8. Cover and let simmer for about 20 minutes until rice is cooked.
  9. Remove from heat and stir in shredded cheese before serving.
