Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and chopped onion, sauté until softened.
- Stir in diced bell peppers and cook for a few more minutes.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Mix in taco seasoning, tomato sauce, green chiles, and black beans.
- Add quick-cooking rice and beef broth, stir well.
- Bring the mixture to a boil, then reduce heat to low.
- Cover and let simmer for about 20 minutes until rice is cooked.
- Remove from heat and stir in shredded cheese before serving.
