Beef Enchilada Nacho Skillet

Ingredients

  • 2 tablespoons Avocado Oil
  • 1 pound Lean Ground Beef
  • 2 tablespoons Taco Seasoning
  • 1 Jalapeño de-seeded and finely chopped
  • 3 cloves Garlic
  • 1 15 ounce jar Red Enchilada Sauce
  • 2 ½ cups Water
  • 1 cup Rice
  • ½ cup Italian Parsley
  • 1 ½ cups Shredded Mexican Cheese
  • 2 ½ cups Tortilla Chips
  • 1 Avocado diced

Instructions

  1. Preheat the oven to 400°F.
  2. Heat the avocado oil in a skillet over medium-high heat.
  3. Dice the onion and add it to the skillet with the ground beef, cooking until the beef is almost cooked through.
  4. Add the diced jalapeño and garlic along with the taco seasoning, cooking for an additional 2 minutes.
  5. Stir in the enchilada sauce, water, and rice, and combine well.
  6. Cover the skillet and allow the mixture to cook undisturbed for 16-17 minutes.
  7. Remove the cover, stir in half of the shredded cheese and the chopped cilantro.
  8. Add the tortilla chips, pressing them down into the mixture.
  9. Top with the remaining shredded cheese and transfer to the oven.
  10. Bake for 10-12 minutes until the cheese is melted.
  11. Garnish with diced avocado and additional jalapeño or cilantro if desired, then serve.
