Beef Enchilada Nacho Skillet

Instructions
- Preheat the oven to 400°F.
- Heat the avocado oil in a skillet over medium-high heat.
- Dice the onion and add it to the skillet with the ground beef, cooking until the beef is almost cooked through.
- Add the diced jalapeño and garlic along with the taco seasoning, cooking for an additional 2 minutes.
- Stir in the enchilada sauce, water, and rice, and combine well.
- Cover the skillet and allow the mixture to cook undisturbed for 16-17 minutes.
- Remove the cover, stir in half of the shredded cheese and the chopped cilantro.
- Add the tortilla chips, pressing them down into the mixture.
- Top with the remaining shredded cheese and transfer to the oven.
- Bake for 10-12 minutes until the cheese is melted.
- Garnish with diced avocado and additional jalapeño or cilantro if desired, then serve.
