Ingredients

  • lbs raw 95% lean ground beef
  • 1 small onion, diced

  • 2 cups canned enchilada sauce
  • 6 oz 50% reduced fat Pepper Jack cheese, shredded

Instructions

  1. 1. Cook the ground beef in a large skillet over medium-high heat, breaking it up as it browns.
  2. 2. Once the beef is cooked, add the diced onion and minced garlic, stirring to combine, and cook for 4 minutes until the onions are softened.
  3. 3. Add the enchilada sauce and stir to coat the beef mixture.
  4. 4. Reduce the heat to a simmer, sprinkle the shredded cheese on top, cover, and let it simmer for 3-4 minutes until the cheese melts and the dip is heated through.
