Mexican Taco Skillet

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • ½ cup Water
  • ½ large Onion (sliced into half moons)
  • 3 large Bell peppers (cut into thin strips)
  • 1 14.5-oz can Diced tomatoes (drained)
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)
  • 1 cup Mexican cheese blend (shredded)
  • cup Green onions (sliced)
  • to taste Sour cream (optional, for serving)

Instructions

  1. Heat the oil in a large skillet over medium-high heat and brown the ground beef for 8-10 minutes.
  2. Add the taco seasoning and water, cooking for 2-3 minutes until the liquid is absorbed.
  3. Reduce heat to medium, add onions and bell peppers, and cook for 10-15 minutes until soft.
  4. Stir in the diced tomatoes and simmer for 2-3 minutes, seasoning with salt and pepper to taste.
  5. Reduce heat to low, sprinkle cheese on top, cover, and heat until the cheese melts.
  6. Remove from heat and garnish with green onions, serving with sour cream if desired.
