Instructions
- Heat the oil in a large skillet over medium-high heat and brown the ground beef for 8-10 minutes.
- Add the taco seasoning and water, cooking for 2-3 minutes until the liquid is absorbed.
- Reduce heat to medium, add onions and bell peppers, and cook for 10-15 minutes until soft.
- Stir in the diced tomatoes and simmer for 2-3 minutes, seasoning with salt and pepper to taste.
- Reduce heat to low, sprinkle cheese on top, cover, and heat until the cheese melts.
- Remove from heat and garnish with green onions, serving with sour cream if desired.
