Instructions
- Heat a large skillet over medium-high heat.
- Add avocado oil and ground turkey, cooking until the turkey is no longer pink.
- Stir in onion, garlic, red pepper, poblano pepper, quinoa, fire roasted tomato, frozen corn, smoked paprika, cumin, and chili powder.
- Add vegetable broth, water, and black beans, stirring gently.
- Cover and bring to a boil, then reduce heat and simmer for 15 minutes.
- Once quinoa is cooked, season with salt, lime juice, and fresh cilantro.
- Top with shredded cheese, cover, and cook for an additional 2 minutes until cheese is melted.
- Serve.
