Ingredients

  • 1 tablespoon avocado oil
  • 1 lb ground turkey
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small red pepper, diced
  • 1 small poblano pepper, diced
  • 1 cup quinoa
  • 14 oz can of diced fire roasted tomato
  • 1 cup frozen corn
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 1 cup vegetable broth
  • 1 cup water
  • 1 cup low sodium black beans, drained and rinsed
  • to taste salt
  • 2 tablespoons lime juice
  • ΒΌ cup fresh chopped cilantro
  • 1 cup shredded cheddar or Mexican cheese

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add avocado oil and ground turkey, cooking until the turkey is no longer pink.
  3. Stir in onion, garlic, red pepper, poblano pepper, quinoa, fire roasted tomato, frozen corn, smoked paprika, cumin, and chili powder.
  4. Add vegetable broth, water, and black beans, stirring gently.
  5. Cover and bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Once quinoa is cooked, season with salt, lime juice, and fresh cilantro.
  7. Top with shredded cheese, cover, and cook for an additional 2 minutes until cheese is melted.
  8. Serve.
