Cheesy Taco Rice Skillet

Ingredients

Main Ingredients

  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1 medium onion, diced
  • 3 tbsp taco seasoning
  • 4 cloves garlic, minced
  • ½ cup salsa
  • 1 cup Mexican cheese, shredded

Toppings

  • to taste shredded lettuce
  • to taste tomato
  • to taste sour cream
  • to taste cilantro
  • to taste lime wedges
  • to taste extra salsa

Instructions

  1. Heat 1-2 tsp of olive oil in a large skillet and brown the ground turkey for about 10-12 minutes.
  2. Add minced garlic and diced onion to the skillet and cook for 2-3 minutes until the onions are translucent.
  3. Stir in taco seasoning, cooked rice, salsa, and half of the Mexican cheese. Combine well and cook on low heat for an additional 3-4 minutes.
  4. Top the mixture with the remaining cheese, cover, and cook for 1-2 minutes until the cheese melts.
  5. Serve with your favorite taco toppings.
