Slow Cooker White Bean Soup

Instructions
- Combine all ingredients except salt and pepper in the slow cooker and stir well.
- Cook on low for 8 hours.
- Blend about ⅓ to ½ of the soup using an immersion blender or by transferring to a regular blender, then return it to the slow cooker.
- Stir to combine and adjust seasoning with salt and pepper as desired.
