Slow Cooker White Bean Soup

Ingredients

  • 8 slices center cut bacon
  • 3 15 oz cans Great Northern beans
  • 4 medium carrots
  • 4 stalks celery
  • 1 medium onion
  • 3 cloves garlic
  • 3 cups reduced sodium fat free chicken broth or vegetable broth
  • 1 leaf bay leaf
  • 1 tablespoon dried parsley
  • ½ teaspoon dried sage
  • 1 teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes
  • to taste salt
  • to taste black pepper

Instructions

  1. Combine all ingredients except salt and pepper in the slow cooker and stir well.
  2. Cook on low for 8 hours.
  3. Blend about ⅓ to ½ of the soup using an immersion blender or by transferring to a regular blender, then return it to the slow cooker.
  4. Stir to combine and adjust seasoning with salt and pepper as desired.
