Ingredients

The biscuits

  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 cups plus 3 all-purpose flour

  • ½ cup chilled unsalted butter
  • 1 cup plus 1 sour cream

The gravy

  • 2 tsp vegetable oil
  • 1 lb ground chicken
  • 2 tsp plus 1 Cajun seasoning
  • 1 small onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 2 stalks celery, finely chopped
  • cups whole milk
  • 1 tsp apple cider vinegar
  • ½ tsp crushed red pepper flakes
  • Coarsely chopped parsley (for serving)

Instructions

  1. Preheat the oven to 425°F and prepare the biscuit dough by mixing the dry ingredients in a food processor, then adding chilled butter and sour cream.
  2. Shape the dough into a rectangle, fold it, and cut it into pieces before placing them on a baking sheet.
  3. Brush the tops of the biscuits with a sour cream and water mixture, sprinkle with salt, and bake until golden brown.
  4. In a skillet, heat vegetable oil and cook the ground chicken with Cajun seasoning until browned.
  5. In the same skillet, melt butter and sauté the chopped onion, bell pepper, and celery until softened.
  6. Add flour to the vegetables, then gradually stir in milk to create a gravy, allowing it to thicken.
  7. Finish the gravy with apple cider vinegar, crushed red pepper flakes, and the cooked chicken, then serve with the biscuits.
