Ingredients

The biscuits

  • 2 cups all-purpose flour
  • 1 Tbsp aluminum free baking powder
  • 2 tsp granulated sugar
  • ¼ tsp baking soda
  • ½ tsp salt
  • 8 Tbsp unsalted butter
  • 1 cup buttermilk

The gravy

  • 1 lb pork breakfast sausage
  • cup all-purpose flour
  • to taste salt and pepper
  • 3 cups whole milk
  • 2 Tbsp butter

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, sugar, baking soda, and salt.
  3. Cut the cold butter into small cubes and mix into the flour until it resembles small clumps.
  4. Make a well in the mixture and pour in the buttermilk, folding until combined.
  5. Turn the dough onto a floured surface and gently roll it out, then fold and repeat to create layers.
  6. Shape the dough into a rectangle and cut into 8 squares, placing them on the baking sheet.
  7. Bake for 10-13 minutes until golden brown and brush with melted butter.
  8. In a skillet, cook the sausage until browned, then add butter if needed.
  9. Sprinkle in flour and pepper, cooking for 1-2 minutes before adding milk and seasoning with salt.
  10. Cook until the mixture simmers and thickens, then serve over the biscuits.
