Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¾ cup unsalted butter

Wet Ingredients

  • ½ cup buttermilk
  • 1 large egg

Egg Wash

  • 1 large egg
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the dry ingredients together.
  3. Grate the butter into the flour mixture and place the bowl in the freezer for 5-7 minutes.
  4. In another bowl, whisk together the buttermilk and egg, then chill in the refrigerator.
  5. Make the egg wash by whisking together the egg and milk, and refrigerate.
  6. Remove the flour mixture from the freezer and gently mix in the butter until it resembles small peas.
  7. Add the buttermilk mixture to the flour and mix until just combined.
  8. Turn the dough onto a floured surface and press it to a ¾-inch thickness.
  9. Cut out biscuits using a biscuit cutter and place them on the baking sheet.
  10. If necessary, chill the baking sheet in the freezer for 5 minutes.
  11. Brush the tops with egg wash and bake for 10-15 minutes until golden brown.
  12. Serve warm with butter and jam.
