Southern Buttermilk Biscuits

buttermilk or plain kefir
Instructions
- Preheat the oven to 450°F and line a baking sheet with parchment paper or a silicone mat.
- In a food processor, combine the dry ingredients and pulse a few times.
- Add the cold butter and pulse until the mixture resembles coarse meal.
- Add the buttermilk and pulse until just combined; the mixture should be moist and sticky.
- Transfer the dough to a floured surface and gently pat it down to about 1 inch thick.
- Fold the dough in half horizontally and vertically, repeating this process five times.
- Pat the dough into a disc about 1 inch thick and cut out biscuits using a 2-inch cutter.
- Place the biscuits close together on the baking sheet and brush with melted butter and sprinkle with sugar if desired.
- Bake for 10-12 minutes until the tops are golden.
- Remove from the oven and serve as desired.
