Ingredients

  • 2 cups unbleached all-purpose flour
  • ¼ teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 6 tablespoons very cold butter
  • 1 cup buttermilk or plain kefir

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper or a silicone mat.
  2. In a food processor, combine the dry ingredients and pulse a few times.
  3. Add the cold butter and pulse until the mixture resembles coarse meal.
  4. Add the buttermilk and pulse until just combined; the mixture should be moist and sticky.
  5. Transfer the dough to a floured surface and gently pat it down to about 1 inch thick.
  6. Fold the dough in half horizontally and vertically, repeating this process five times.
  7. Pat the dough into a disc about 1 inch thick and cut out biscuits using a 2-inch cutter.
  8. Place the biscuits close together on the baking sheet and brush with melted butter and sprinkle with sugar if desired.
  9. Bake for 10-12 minutes until the tops are golden.
  10. Remove from the oven and serve as desired.
