Southern Buttermilk Biscuits

Instructions
- 1. In a mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
- 2. Grate the chilled butter into the flour mixture or cut it into cubes and mix until it resembles coarse crumbs.
- 3. Make a well in the center and add the buttermilk, stirring until a rough dough forms. Do not over mix.
- 4. Let the dough rest in the fridge for about 10 minutes.
- 5. Turn the dough onto a floured surface and knead gently a few times.
- 6. Roll or pat the dough to about ½ inch thick and fold it several times to create layers.
- 7. Press the dough down to 1 inch thick and cut out biscuits using a cookie cutter.
- 8. Place the biscuits on a baking sheet and brush with cream.
- 9. Bake at 400°F for 12-15 minutes until lightly browned.
