Ingredients
The dough

all-purpose flour

baking powder

granulated sugar

kosher salt

baking soda

unsalted butter, frozen

tablespoons
trans fat-free vegetable shortening
1 ½
cups
cold buttermilk
For baking

unsalted butter for pan
Instructions
Combine the dry ingredients in a food processor and pulse until mixed.
Add the shortening and pulse until fine crumbs form.
Switch to the grating disk and add the frozen butter while the machine runs.
Transfer the mixture to a bowl and coat the butter shreds with the flour.
Add the buttermilk and gently fold until combined.
Turn the dough onto a floured surface and pat into a ½-inch thick rectangle.
Fold the dough over in thirds like a letter and repeat the patting and folding process twice.
Pat the dough into a ¾-inch thickness and cut out biscuits using a cutter.
Place the biscuits on a baking sheet and refrigerate for 15-30 minutes.
Preheat the oven to 450°F and butter the baking sheet.
Bake the biscuits until golden brown, about 16 minutes.
