Instructions
- Preheat the oven to 425ºF.
- Line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, salt, and baking soda in a large bowl.
- Work in the cold butter until the mixture resembles coarse crumbs.
- Stir in the buttermilk until just moistened.
- Turn the dough onto a lightly floured surface and pat into a ½-inch thick rectangle.
- Fold the dough in half and repeat this folding process three more times.
- Roll the dough to about 1-inch thick and cut out biscuits using a round cutter.
- Chill the cut biscuits in the refrigerator for at least an hour if time allows.
- Rub the tops of the biscuits with maple syrup and sprinkle with salt or pepper.
- Bake in the oven for 15 to 20 minutes until golden and risen.
