Ingredients

The biscuits

  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • teaspoons sea salt or kosher salt
  • ½ teaspoon baking soda
  • 12 tablespoons cold unsalted butter, diced
  • cups cold buttermilk

For topping

  • to taste pure maple syrup
  • to taste nice sea salt or coarse freshly ground black pepper

Instructions

  1. Preheat the oven to 425ºF.
  2. Line a baking sheet with parchment paper.
  3. Whisk together the flour, sugar, baking powder, salt, and baking soda in a large bowl.
  4. Work in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the buttermilk until just moistened.
  6. Turn the dough onto a lightly floured surface and pat into a ½-inch thick rectangle.
  7. Fold the dough in half and repeat this folding process three more times.
  8. Roll the dough to about 1-inch thick and cut out biscuits using a round cutter.
  9. Chill the cut biscuits in the refrigerator for at least an hour if time allows.
  10. Rub the tops of the biscuits with maple syrup and sprinkle with salt or pepper.
  11. Bake in the oven for 15 to 20 minutes until golden and risen.
