Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together whole wheat flour, baking powder, kosher salt, all-purpose flour, and benne seeds. Incorporate chilled butter until the pieces are small. Mix in buttermilk until combined and knead until no dry spots remain.
- Turn the dough onto a floured surface, shape it into a square, and fold it to create layers. Roll it out to an 8-inch square and cut into 9 squares.
- Place biscuits on a parchment-lined baking sheet, brush with melted butter, and sprinkle with salt and benne seeds. Bake for 25-30 minutes until golden brown.
- In a skillet, melt butter over medium heat, add sausage and cook until browned. Add onion and cook until softened. Stir in flour and cook briefly, then add milk and simmer until thickened. Season with salt, pepper, vinegar, and red pepper flakes.
- Serve biscuits split open with gravy ladled over them.
