Ingredients

The filling

  • 1 ½ tablespoons extra-virgin olive oil
  • 8 ounces sliced baby bella (cremini) mushrooms
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • 2 cups cooked and shredded boneless, skinless chicken breasts
  • 1 16-ounce bag frozen mixed vegetables
  • 1 tablespoon chopped fresh thyme

The biscuits

  • 1 prepared batch Easy Drop Biscuits batter

Instructions

  1. Preheat the oven to 400°F and prepare a casserole dish.
  2. Sauté mushrooms in olive oil until browned, then add garlic powder, salt, and pepper.
  3. Sprinkle flour over the mushrooms and stir, then gradually add milk while whisking until thickened.
  4. Stir in chicken, frozen vegetables, and thyme, then transfer to the casserole dish.
  5. Drop biscuit dough over the filling and bake for 25 to 30 minutes until biscuits are golden brown.
  6. Let cool slightly before serving.
