Instructions
- Preheat the oven to 350ºF and line an 8×8-inch pan with parchment paper.
- In a medium saucepan, combine the caramels and coconut milk over medium-low heat, stirring until melted and smooth.
- In a medium bowl, mix the melted butter, brown sugar, flour, oats, baking soda, and salt until combined.
- Press half of the oat mixture into the lined pan to form an even layer and bake for 10 minutes.
- Remove the pan from the oven and sprinkle chocolate chips over the crust.
- Pour the caramel mixture over the chocolate chips and crumble the remaining oat mixture on top.
- Return the pan to the oven and bake for an additional 15 minutes, or until the top is lightly browned.
- Allow the carmelitas to cool completely before slicing, ideally overnight.
