Ingredients

The base

  • ¾ cup vegan butter
  • ¾ cup brown sugar
  • 1 cup flour
  • 1 ½ cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

The filling

  • 10 ounces vegan caramels
  • ½ cup full-fat coconut milk
  • 1 cup bittersweet chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line an 8×8-inch pan with parchment paper.
  2. In a medium saucepan, combine the caramels and coconut milk over medium-low heat, stirring until melted and smooth.
  3. In a medium bowl, mix the melted butter, brown sugar, flour, oats, baking soda, and salt until combined.
  4. Press half of the oat mixture into the lined pan to form an even layer and bake for 10 minutes.
  5. Remove the pan from the oven and sprinkle chocolate chips over the crust.
  6. Pour the caramel mixture over the chocolate chips and crumble the remaining oat mixture on top.
  7. Return the pan to the oven and bake for an additional 15 minutes, or until the top is lightly browned.
  8. Allow the carmelitas to cool completely before slicing, ideally overnight.
