Ingredients

The caramel filling

  • 32 pieces caramels, unwrapped
  • ½ cup heavy cream

The cookie base

  • 1 cup all-purpose flour
  • 1 cup old fashioned rolled oats
  • ¾ cup packed light-brown sugar
  • ½ tsp baking soda
  • ¼ tsp table salt
  • 12 Tbsp unsalted butter, cut into 1 Tbsp pieces
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ tsp flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F and butter an 8x8-inch baking dish.
  2. Melt the caramels with heavy cream in a microwave or saucepan until smooth.
  3. In a bowl, whisk together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter and vanilla.
  4. Press half of the oat mixture into the baking dish and bake for 10 minutes.
  5. Sprinkle chocolate chips over the baked layer, pour the caramel mixture on top, and optionally sprinkle with sea salt.
  6. Top with the remaining oat mixture and bake for an additional 16-20 minutes until golden.
  7. Cool completely before cutting into bars.
