Southern Buttermilk Pie

Ingredients

  • 1 9-inch pie crust
  • 6 ounces vegan egg batter
  • 1 cup sugar
  • ½ cup vegan butter
  • 1 cup vegan buttermilk
  • 4 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon zest
  • dash nutmeg
  • pinch salt
  • Coconut whipped cream for topping

Instructions

  1. Preheat the oven to 350°F and place the pie crust in a pie dish.
  2. In a large mixing bowl, combine the vegan egg replacer with sugar using a hand mixer.
  3. Add the vegan butter and mix until well incorporated.
  4. Mix in the vegan buttermilk, flour, vanilla extract, lemon zest, nutmeg, and salt until smooth.
  5. Pour the filling into the prepared pie crust and place it on a baking sheet.
  6. Bake for about 60 minutes, or until the center is set and the top is golden brown.
  7. Allow the pie to cool completely before serving, and decorate with coconut whipped cream if desired.
