Vegan Pie Crust

vegan butter, solid and very cold, diced

Instructions
- Ensure all ingredients are very cold.
- In a large bowl, mix the sifted flour and sea salt.
- Add the cold vegan butter and mix until it resembles coarse crumbs.
- Slowly add the ice cold water, mixing until the dough comes together.
- Shape the dough into a disk and wrap it tightly in reusable wrap.
- Refrigerate for at least 2 hours or up to 2 days.
- When ready to use, let the dough sit at room temperature for 5 to 10 minutes.
- Roll out the dough on parchment paper to a 10 to 12 inch circle.
- Transfer the dough to a pie dish, smoothing out the bottom and edges.
- If pre-baking, prick the bottom with a fork and add pie weights.
