Ingredients

  • 2 ½ cups fine grained almond flour
  • 1 cup brown rice flour
  • ½ cup tapioca starch
  • ½ teaspoon sea salt
  • ¾ cup cooked potato
  • 6-8 tablespoons water
  • 2-3 teaspoons cane sugar (optional)

Instructions

  1. 1. Preheat the oven to 350°F (175°C) if baking the pie.
  2. 2. In a bowl, whisk together the almond flour, brown rice flour, tapioca starch, and sea salt to remove clumps.
  3. 3. Crumble the cooked potato into the flour mixture and add water.
  4. 4. Mix with your hands until a ball of dough forms that is not sticky or dry.
  5. 5. If making two crusts, divide the dough in half.
  6. 6. Flatten one half on parchment paper and roll out to about ¼ inch thick.
  7. 7. Transfer the rolled dough to a pie dish using a rolling pin.
  8. 8. Press the dough into the dish and pinch the edges to form a decorative edge.
  9. 9. Fill with your desired filling or bake if needed.
