Healthy Vegan Gluten-Free Pie Crust

Instructions
- 1. Preheat the oven to 350°F (175°C) if baking the pie.
- 2. In a bowl, whisk together the almond flour, brown rice flour, tapioca starch, and sea salt to remove clumps.
- 3. Crumble the cooked potato into the flour mixture and add water.
- 4. Mix with your hands until a ball of dough forms that is not sticky or dry.
- 5. If making two crusts, divide the dough in half.
- 6. Flatten one half on parchment paper and roll out to about ¼ inch thick.
- 7. Transfer the rolled dough to a pie dish using a rolling pin.
- 8. Press the dough into the dish and pinch the edges to form a decorative edge.
- 9. Fill with your desired filling or bake if needed.
