Vegan Pie Crust

Instructions
- Preheat the oven to 350ºF and prepare a 9-inch pie dish.
- In a food processor, combine oat flour, tapioca starch, salt, and coconut oil, and pulse until crumbly.
- Add maple syrup and cold water, pulsing until the dough forms a ball.
- Place the dough between two sheets of parchment paper and roll out to about 11-12 inches in diameter.
- Transfer the rolled dough to the pie dish, pressing it into the corners and trimming any excess.
- For baked pies, add filling and bake as required; for cold pies, bake the crust for 15-20 minutes until lightly browned.
