Ingredients

  • 6 ounces raspberries
  • ½ cup water
  • ¼ cup low carb sugar (or honey for Paleo)
  • 1 tablespoon lemon juice
  • ¾ teaspoon gelatin (Knox)
  • to taste stevia glycerite

Instructions

  1. Sprinkle gelatin over lemon juice in a small cup and set aside.
  2. In a pot, combine raspberries, water, and low carb sugar, then bring to a low boil.
  3. Reduce heat and simmer for 20 minutes, stirring occasionally until raspberries break apart.
  4. Add the bloomed gelatin to the pot and stir until dissolved.
  5. Adjust sweetness with stevia glycerite as needed.
  6. Transfer the mixture to a clean container and refrigerate overnight to gel.
