Ingredients

  • 6 ounces raspberries
  • ½ cup water
  • ¼ cup low carb sugar (or honey for Paleo)
  • 1 tablespoon lemon juice
  • ¾ teaspoon gelatin (Knox)
  • to taste stevia glycerite

Instructions

  1. Sprinkle gelatin over lemon juice in a small measuring cup.
  2. In a pot, combine raspberries, water, and low carb sugar, then heat over medium until boiling.
  3. Reduce heat and simmer for 20 minutes, stirring occasionally until raspberries break apart.
  4. Stir in the dissolved gelatin until fully mixed.
  5. Adjust sweetness with stevia glycerite to taste.
  6. Transfer the mixture to a container and refrigerate overnight to set.
