Sugar-Free Strawberry Jam

Knox Gelatin powder
Instructions
- Sprinkle the gelatin over the lemon juice to bloom.
- In a small saucepan over medium heat, combine the strawberries, sweetener, and water. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat and simmer for 20 minutes.
- Tear the bloomed gelatin into small pieces and stir it into the strawberries until melted.
- Turn off the heat and adjust the sweetness to taste.
- Let the mixture cool, then spoon it into a clean jar and refrigerate.
- Use within 2-3 weeks or freeze for longer storage.
