Slow Cooker Chicken Marsala

Ingredients

  • 6 pieces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 2 teaspoons minced garlic
  • ½ cup marsala wine
  • ½ cup chicken broth
  • cups sliced mushrooms
  • ¼ cup cornstarch
  • ¼ cup heavy cream
  • 2 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium-high heat and season chicken with salt and pepper.
  2. Brown the chicken in the pan for 4-5 minutes on each side until golden.
  3. Transfer the chicken to the slow cooker and add garlic, marsala wine, chicken broth, and mushrooms.
  4. Cook on LOW for 5 hours.
  5. Remove the chicken from the slow cooker and whisk together cornstarch with 1/3 cup cold water.
  6. Pour the cornstarch mixture into the slow cooker and stir to combine.
  7. Return the chicken to the slow cooker, turn the heat to HIGH, and cook for 30 minutes until the sauce thickens.
  8. Stir in heavy cream and adjust seasoning with salt and pepper.
  9. Serve garnished with parsley.
