Ingredients

The chili base

  • 2 cans petite diced tomatoes
  • 2 cans tomato sauce
  • 2 large skinless boneless chicken breasts
  • 1 cup chicken broth
  • ½ cup yellow onion, diced
  • 1 large green bell pepper, chopped
  • 1 can corn
  • 1 can black beans
  • 1 whole jalapeño, minced
  • 1 teaspoon salt
  • 2 teaspoons dried oregano
  • 2 teaspoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon minced garlic

The creamy addition

  • 4 ounces cream cheese

Instructions

  1. Add all ingredients except cream cheese to the slow cooker and stir well.
  2. Cook on low for 6-7 hours or on high for 3 hours.
  3. Remove the chicken, shred it, and return it to the slow cooker.
  4. Stir in the cream cheese until melted and well combined.
  5. Taste and adjust seasonings as needed, then cook for an additional 10-15 minutes.
  6. Serve warm with toppings like cilantro, cheese, or crackers.
