Homemade Caesar Dressing

Instructions
- Mash anchovy fillets, garlic, and kosher salt on a cutting board until a smooth paste forms.
- In a medium bowl, whisk together egg yolk, lemon juice, and Dijon mustard.
- Place the bowl over a saucepan to stabilize it while whisking.
- Drizzle in 2 Tbsp of vegetable oil drop by drop while whisking constantly until thickened.
- Gradually add the remaining ¼ cup vegetable oil in a steady stream while whisking until the mixture resembles mayonnaise.
- Adjust the consistency with a dash of water until it resembles heavy cream.
- Mix in the anchovy paste and grated Parmesan cheese until smooth, and adjust seasoning with salt if necessary.
