Homemade Caesar Dressing

Ingredients

  • 3 fillets oil-packed anchovy
  • 1 clove large garlic
  • ¾ tsp kosher salt
  • 1 large egg yolk
  • 2 Tbsp fresh lemon juice
  • ¾ tsp Dijon mustard
  • ¼ cup vegetable oil
  • 2 Tbsp vegetable oil
  • 3 Tbsp Parmesan cheese

Instructions

  1. Mash anchovy fillets, garlic, and kosher salt on a cutting board until a smooth paste forms.
  2. In a medium bowl, whisk together egg yolk, lemon juice, and Dijon mustard.
  3. Place the bowl over a saucepan to stabilize it while whisking.
  4. Drizzle in 2 Tbsp of vegetable oil drop by drop while whisking constantly until thickened.
  5. Gradually add the remaining ¼ cup vegetable oil in a steady stream while whisking until the mixture resembles mayonnaise.
  6. Adjust the consistency with a dash of water until it resembles heavy cream.
  7. Mix in the anchovy paste and grated Parmesan cheese until smooth, and adjust seasoning with salt if necessary.
