Ingredients

  • 1 small Egg Yolk
  • 1 tsp Anchovy Paste
  • 2 cloves Garlic (pressed or as paste)
  • 2 tsp Worcestershire Sauce
  • 1 tbsp Dijon Mustard
  • ΒΌ cup Parmesan Cheese (finely grated)
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tsp Red Wine Vinegar
  • 1 tsp Lemon Juice
  • pinch Kosher Salt
  • to taste Freshly Cracked Black Pepper

Instructions

  1. Whisk the egg yolk, anchovy paste, and garlic together in a bowl.
  2. Stir in the Worcestershire sauce and Dijon mustard, whisking to combine.
  3. Add the Parmesan cheese and blend until fully combined.
  4. Slowly drizzle in the olive oil while whisking continuously until emulsified.
  5. Stir in the red wine vinegar and lemon juice, then taste and season with salt and pepper.
  6. Refrigerate the dressing for at least one hour before serving for best flavor.
