Ingredients

Meatballs

  • 1 lb ground turkey
  • ½ cup grated carrots
  • 1 large egg
  • 2 Tbsp grated fresh ginger
  • 2 Tbsp coconut flour
  • 2 Tbsp coconut aminos or soy sauce
  • ½ tsp salt

Peanut Sauce

  • cup natural peanut butter
  • 2 large limes, juiced
  • ¼ cup honey
  • ¼ cup coconut aminos or soy sauce
  • 2 tsp fresh grated ginger or dried ginger
  • 1 pinch red pepper flakes
  • ¼ cup water to thin

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix all meatball ingredients until well blended.
  3. Roll the mixture into balls, about 2 tablespoons each, and place them on a parchment-lined baking sheet.
  4. Bake the meatballs for 20 minutes.
  5. While the meatballs are baking, prepare the peanut sauce by mixing all sauce ingredients in a small bowl.
  6. Add water to the sauce to achieve the desired consistency.
  7. Coat the meatballs and zoodles in the peanut sauce or serve the sauce on top.
  8. Garnish with sesame seeds if desired and serve immediately.
