Ingredients

  • 1 pound ground chicken or turkey
  • 1 large egg
  • 1 cup panko breadcrumbs
  • ½ cup minced green onion
  • 3 cloves pressed garlic
  • 1 ½ tablespoons grated ginger or ginger paste
  • 1 tablespoon soy sauce or fish sauce
  • 1 tablespoon red curry paste
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with cooking spray.
  2. In a large bowl, combine the ground turkey or chicken with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste, salt, and pepper.
  3. Gently mix the ingredients until just combined, then cover and refrigerate for at least 15 minutes.
  4. Use a small scoop to form the meatballs into 1-inch balls and place them on a cutting board.
  5. Dampen your hands and roll the meatballs, then place them evenly spaced on the baking sheet.
  6. Bake the meatballs for about 20 minutes until no longer pink inside.
  7. Broil on high for an additional 5 minutes to achieve a crispy crust.
  8. Serve immediately or at room temperature.
