Baked Thai Turkey Meatballs

Instructions
- Preheat the oven to 400°F and prepare a baking sheet with cooking spray.
- In a large bowl, combine the ground turkey or chicken with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste, salt, and pepper.
- Gently mix the ingredients until just combined, then cover and refrigerate for at least 15 minutes.
- Use a small scoop to form the meatballs into 1-inch balls and place them on a cutting board.
- Dampen your hands and roll the meatballs, then place them evenly spaced on the baking sheet.
- Bake the meatballs for about 20 minutes until no longer pink inside.
- Broil on high for an additional 5 minutes to achieve a crispy crust.
- Serve immediately or at room temperature.
