Ingredients

The meatballs

  • 1 lb ground turkey
  • cup whole wheat panko breadcrumbs
  • 1 large egg
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp fresh grated ginger
  • 1 clove garlic
  • 2 stalks green onions

The sauce

  • ½ cup low-sodium soy sauce
  • cup beef broth
  • ¼ cup honey
  • 1 tsp sesame oil
  • 4 cloves garlic
  • 2 tsp fresh grated ginger
  • ¼ tsp black pepper
  • ¼ to ½ tsp crushed red chili flakes
  • ½ Tbsp cornstarch
  • ½ Tbsp water

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together ground turkey, breadcrumbs, egg, soy sauce, ginger, garlic, and green onions until well combined.
  3. Using a cookie scoop, form 1-inch meatballs and place them on a prepared baking sheet.
  4. Bake the meatballs for 13 to 15 minutes until lightly browned and cooked through.
  5. While the meatballs are baking, combine soy sauce, honey, beef broth, sesame oil, garlic, ginger, and pepper in a saucepan and bring to a boil.
  6. Reduce the heat and let the sauce simmer for about 5 minutes to thicken.
  7. If the sauce is too thin, mix cornstarch and water to create a slurry and add it to the sauce.
  8. Once the meatballs are done, coat them with the sauce and serve over brown rice, garnished with green onions and sesame seeds.
