Ingredients

Meatballs

  • 1 lb ground turkey
  • ½ small yellow onion
  • 1 tsp ground ginger
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 2 cloves garlic

Peanut Sauce

  • ½ cup natural peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tbsp honey
  • 1 tbsp lime juice
  • ½ tsp ground ginger
  • 2 cloves garlic
  • cup water

Cauliflower Rice Bowl

  • 16 oz frozen cauliflower rice
  • 1 tbsp lime juice
  • ½ tsp salt
  • 2 carrots sliced
  • 1 cup diced cucumber
  • 1 cup edamame

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together all meatball ingredients and form into meatballs weighing 40g each, placing them on the baking sheet.
  3. Bake the meatballs for 15 minutes.
  4. While the meatballs are baking, whisk together all peanut sauce ingredients and set aside.
  5. Prepare the cauliflower rice according to package instructions, adding lime juice and salt.
  6. Divide the cauliflower rice into three bowls, adding 1/3 cup cucumber, 1/3 cup edamame, and 1/3 of the sliced carrots to each bowl.
  7. Once the meatballs are done, trim any excess fat and place 4 meatballs on top of each bowl.
  8. Divide the peanut sauce into three portions and drizzle over the meatballs. Enjoy!
