Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, mix together all meatball ingredients and form into meatballs weighing 40g each, placing them on the baking sheet.
- Bake the meatballs for 15 minutes.
- While the meatballs are baking, whisk together all peanut sauce ingredients and set aside.
- Prepare the cauliflower rice according to package instructions, adding lime juice and salt.
- Divide the cauliflower rice into three bowls, adding 1/3 cup cucumber, 1/3 cup edamame, and 1/3 of the sliced carrots to each bowl.
- Once the meatballs are done, trim any excess fat and place 4 meatballs on top of each bowl.
- Divide the peanut sauce into three portions and drizzle over the meatballs. Enjoy!
