Paleo Asian Meatballs Noodle Bowl

Ingredients

The sauce

  • ½ cup coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp raw honey
  • 1 tsp ground ginger
  • 2 tsp garlic, minced
  • ¼ tsp ground black pepper
  • ½ tsp tapioca starch

The meatballs

  • 2 lbs ground turkey
  • 4 pcs green onions, diced
  • 1 tbsp avocado oil

The zoodles

  • 4 pcs zucchini, spiralized
  • 1 tbsp avocado oil
  • to taste salt and pepper
  • to taste sesame seeds

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Whisk together all sauce ingredients except tapioca starch in a bowl.
  3. In a large bowl, combine ground turkey, green onions, and half of the sauce mixture. Mix and form into meatballs.
  4. Place meatballs on the baking sheet and bake for 20 minutes.
  5. Spiralize the zucchini into noodles.
  6. In a skillet, heat zoodles with avocado oil, adding salt and pepper to taste.
  7. In a saucepan, heat the remaining sauce, adding tapioca starch, and simmer until thickened.
  8. Serve meatballs over zoodles, spoon sauce on top, and garnish with green onions and sesame seeds.
