Ingredients

  • 1 cup aquafaba
  • 1 ripe banana mashed (plus additional sliced banana for topping, if desired)
  • ¼ cup coconut palm sugar or brown sugar
  • 1 teaspoon vanilla
  • ¼ cup vegetable oil
  • 1 cup chickpea flour (or other gluten-free flour)
  • 1 ½ teaspoons baking powder
  • pinch none salt (optional)
  • ½ cup chopped walnuts (plus additional for topping, if desired)

Instructions

  1. Whip aquafaba and coconut palm sugar in a mixer until stiff peaks form.
  2. Gently mix in mashed banana, vanilla, and vegetable oil until just blended.
  3. Combine chickpea flour, baking powder, and salt, then gradually stir into the wet mixture until blended.
  4. Fold in chopped walnuts and scrape down the sides of the bowl.
  5. Heat a pancake griddle over medium heat and spray with nonstick spray.
  6. Pour ½ cup of batter for each pancake onto the griddle and cook until golden brown on both sides.
  7. Serve with additional banana slices and walnuts if desired.
