Magic Vegan Banana Pancakes

Instructions
- Whip aquafaba and coconut palm sugar in a mixer until stiff peaks form.
- Gently mix in mashed banana, vanilla, and vegetable oil until just blended.
- Combine chickpea flour, baking powder, and salt, then gradually stir into the wet mixture until blended.
- Fold in chopped walnuts and scrape down the sides of the bowl.
- Heat a pancake griddle over medium heat and spray with nonstick spray.
- Pour ½ cup of batter for each pancake onto the griddle and cook until golden brown on both sides.
- Serve with additional banana slices and walnuts if desired.
