Gruyere and Goat Cheese Fondue

Ingredients

The cheese mixture

  • 8 ounces Gruyere cheese
  • 8 ounces goat cheese
  • 1 cup white wine
  • 1 tablespoon cornstarch
  • 6 cloves garlic
  • ¼ cup fresh chives
  • ¼ cup fresh parsley
  • 1 teaspoon freshly squeezed lemon juice
  • ½ teaspoon coarse black pepper

Dippers

  • to taste bread cubes
  • to taste broccoli
  • to taste grape tomatoes
  • to taste cauliflower
  • to taste sliced green apples

Instructions

  1. Combine chives, parsley, and garlic in a small bowl and set aside.
  2. Add wine to the fondue pot and heat over medium until steaming.
  3. Toss shredded Gruyere cheese with cornstarch in another bowl.
  4. Add Gruyere and goat cheese to the pot and cook over medium-low heat, stirring often until melted.
  5. Once melted, reduce heat to low and stir in lemon juice, black pepper, and the herb mixture.
