Smoky 3 Cheese Fondue

Ingredients

The cheese fondue

  • 12 ounces smoked gouda cheese, cubed
  • 8 ounces gruyere cheese, cubed
  • 4 ounces swiss cheese, cubed (or brie)
  • 2 tablespoons corn starch
  • ½ teaspoon cayenne pepper
  • 1 clove garlic
  • 1 ½ cups dry white wine
  • 1 tablespoon brandy
  • 1 tablespoon truffle oil (optional)
  • to taste freshly grated nutmeg

The croissants

  • 6 large croissants, sliced into sticks
  • 6 tablespoons butter, softened
  • 2 cloves garlic, grated
  • ¼ cup basil, chopped

For serving

  • to taste cooked steak cubes
  • to taste assorted veggies

Instructions

  1. Toss the cubed cheeses with cornstarch and cayenne in a bowl.
  2. Rub the inside of a fondue pot with garlic and discard the garlic.
  3. Pour wine, brandy, and truffle oil into the pot and heat over medium-low until bubbling.
  4. Add cheese gradually, stirring until melted and combined.
  5. Season with nutmeg and pepper, keeping warm until serving.
  6. Mix butter, garlic, and basil in a bowl and spread on both sides of the croissants.
  7. Toast the croissants in a skillet over medium heat for 3-4 minutes per side until golden.
  8. Serve the fondue immediately with the toasted croissants and assorted veggies.
