Classic Cheese Fondue

Gruyere cheese, shredded

unbleached all-purpose flour

dry white wine

freshly grated nutmeg

kirsch (optional)
Instructions
- Toss the cheese with the flour.
- Rub the interior of a medium saucepan with the minced garlic.
- Place the saucepan over medium heat and add the wine, bringing it to a simmer.
- Add the cheese mixture to the wine, one handful at a time, stirring in the nutmeg.
- Stir over low heat until the cheese is melted and bubbling.
- Add a splash or two of kirsch if desired and stir until it bubbles slightly.
- Transfer the cheese mixture to a fondue pot and serve with dippables.
