Classic Cheese Fondue

Ingredients

  • 1 clove garlic, minced
  • 1 lb. Gruyere cheese, shredded
  • 3 tablespoons unbleached all-purpose flour
  • cups dry white wine
  • ¼ teaspoon freshly grated nutmeg
  • splash or two kirsch (optional)

Instructions

  1. Toss the cheese with the flour.
  2. Rub the interior of a medium saucepan with the minced garlic.
  3. Place the saucepan over medium heat and add the wine, bringing it to a simmer.
  4. Add the cheese mixture to the wine, one handful at a time, stirring in the nutmeg.
  5. Stir over low heat until the cheese is melted and bubbling.
  6. Add a splash or two of kirsch if desired and stir until it bubbles slightly.
  7. Transfer the cheese mixture to a fondue pot and serve with dippables.
