Cheese Fondue Board

Ingredients

Swiss Fondue

  • 3 cups shredded swiss cheese
  • 3 cups shredded gruyere cheese
  • 2 tablespoons cornstarch
  • 1 clove garlic
  • 1 cup white wine
  • a pinch freshly grated nutmeg
  • to taste kosher salt
  • to taste pepper

Cheddar Fondue

  • 3 cups shredded cheddar
  • 3 cups shredded aged gouda
  • 2 tablespoons cornstarch
  • 1 clove garlic
  • 1 cup beer
  • ΒΌ teaspoon mustard powder
  • 4 ounces crumbled blue cheese (optional)
  • to taste kosher salt
  • to taste pepper

For the Board

  • assorted crackers and breads
  • assorted winter fruits and vegetables
  • thinly sliced grilled steak and/or assorted deli meats
  • to taste honey and/or honeycomb
  • to taste toasted nuts (e.g., marcona almonds, walnuts, pistachios)

Instructions

  1. For the Swiss Fondue, toss the shredded cheeses with cornstarch in a bowl.
  2. Rub the inside of a fondue pot with garlic and discard the garlic.
  3. Pour the white wine into the pot and heat over medium-low until bubbling.
  4. Gradually add the cheese, stirring until melted and combined, then season with nutmeg, salt, and pepper.
  5. For the Cheddar Fondue, repeat the same process using beer instead of wine and adding mustard powder and blue cheese if desired.
  6. Keep both fondues warm over low heat until ready to serve.
  7. Arrange the fondues on a large board and surround them with breads, fruits, vegetables, meats, honey, and nuts.
