Instructions
- Soak the Medjool dates in hot water for about 5 minutes until softened, then drain and remove pits and stems.
- In a food processor, combine the dates, cocoa powder, softened coconut oil, and vanilla extract. Process until smooth and a ball forms.
- Scoop out rounded teaspoons of the mixture and place them on a parchment-lined plate without rolling them.
- Freeze the truffle balls for about 5-10 minutes to firm up, then roll them into even spheres.
- For chocolate-dipped truffles, melt the chocolate chips and coconut oil together in the microwave until smooth.
- Coat each truffle in the melted chocolate, allowing excess to drip off, then place on a parchment-lined baking sheet.
- Sprinkle with flake salt or jimmies, and chill to set.
- For jimmies coating, briefly dip truffles in water, let them dry slightly, and roll in jimmies.
- For cocoa powder coating, roll the truffles in cocoa powder right before serving.
