The chocolate coating

Instructions
- Line a baking sheet with parchment paper or a silicone mat.
- Blend the dates, vanilla extract, cocoa powder, almonds, sunflower seeds, and salt in a food processor until a moist dough forms.
- If the dough is too dry, add more soaked dates or a teaspoon of maple syrup.
- Scoop out 1 tablespoon of dough and roll it into a ball, placing it on the baking sheet. Repeat with the remaining dough.
- Melt the chocolate in a double boiler or microwave, stirring until smooth, then let it cool slightly.
- Dip each truffle into the chocolate using a dipping tool, allowing excess chocolate to drip off.
- Place the dipped truffles back on the baking sheet and refrigerate until the chocolate sets, about 30 minutes.
