Ingredients

The truffles

  • 14 pieces medjool dates, pitted
  • ½ cup nuts (any kind, e.g., pecans)
  • ¾ cup almond meal (or other finely ground nuts)
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla
  • ½ teaspoon sea salt (more to taste)

For topping

  • to taste cocoa, sprinkles, and flaked coconut

Instructions

  1. Soak the dates in hot water for a few minutes to soften, then drain and squeeze out excess water.
  2. Pulse the nuts, almond meal, and cocoa in a food processor until finely ground.
  3. Add the soaked dates, vanilla, and sea salt to the food processor and pulse until a thick, sticky dough forms.
  4. Roll the dough into small balls, aiming for 18-24 truffles.
  5. Roll the balls in your choice of toppings like cocoa powder, chocolate sprinkles, or flaked coconut.
  6. Place the truffles on a baking sheet and freeze until firm, then transfer to an airtight container and store in the refrigerator or freezer.
