Instructions
- Soak the dates in hot water for a few minutes to soften, then drain and squeeze out excess water.
- Pulse the nuts, almond meal, and cocoa in a food processor until finely ground.
- Add the soaked dates, vanilla, and sea salt to the food processor and pulse until a thick, sticky dough forms.
- Roll the dough into small balls, aiming for 18-24 truffles.
- Roll the balls in your choice of toppings like cocoa powder, chocolate sprinkles, or flaked coconut.
- Place the truffles on a baking sheet and freeze until firm, then transfer to an airtight container and store in the refrigerator or freezer.
