Chocolate Tahini Truffles

lightly packed medjool dates, pitted

tahini, unsalted and smooth

cocoa powder

vanilla extract

sea salt
Optional coating

black and/or white sesame seeds
Instructions
- Soak dates in warm water for 5 minutes if they are hard or dry, then drain.
- Process the pitted dates in a food processor until they form a 'date ball'.
- Break the date ball into smaller pieces and add tahini, cocoa powder, vanilla extract, and sea salt.
- Process until well combined, scraping down the sides as necessary.
- Taste the mixture and adjust by adding more cocoa powder or tahini if desired.
- Prepare a plate for the truffles and optionally place sesame seeds in a bowl.
- Use a scoop to form the mixture into balls and roll them in sesame seeds to coat.
- Enjoy immediately or refrigerate for at least 30 minutes to firm up.
