Chocolate Tahini Truffles

Ingredients

The truffles

  • 1 cup lightly packed medjool dates, pitted
  • ½ cup tahini, unsalted and smooth
  • 3 Tbsp cocoa powder
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

Optional coating

  • 3 Tbsp black and/or white sesame seeds

Instructions

  1. Soak dates in warm water for 5 minutes if they are hard or dry, then drain.
  2. Process the pitted dates in a food processor until they form a 'date ball'.
  3. Break the date ball into smaller pieces and add tahini, cocoa powder, vanilla extract, and sea salt.
  4. Process until well combined, scraping down the sides as necessary.
  5. Taste the mixture and adjust by adding more cocoa powder or tahini if desired.
  6. Prepare a plate for the truffles and optionally place sesame seeds in a bowl.
  7. Use a scoop to form the mixture into balls and roll them in sesame seeds to coat.
  8. Enjoy immediately or refrigerate for at least 30 minutes to firm up.
