Instructions
- Process the almonds, ½ cup of coconut, dates, and chocolate in a food processor until a paste forms.
- If the mixture is too dry, add water one teaspoon at a time until it binds together.
- Measure heaping tablespoons of the mixture and roll them into balls.
- Roll each ball in the remaining 2 tablespoons of coconut to coat.
- Store the truffles in the refrigerator in an airtight container until ready to serve.
