Pecan Date Truffles

Medjool dates, pitted

unsweetened shredded coconut

raw pecans

vanilla extract

The coating

70% dark chocolate chips
Instructions
- Combine all ingredients in a food processor and process until a sticky dough forms.
- Scoop the dough by rounded tablespoons and roll into smooth balls.
- Place the balls on a lined baking sheet and freeze for 30 minutes.
- Melt the dark chocolate chips in an oven or microwave.
- Roll each ball in the melted chocolate and return to the parchment paper to set.
- Optionally, sprinkle crushed pecans or coconut on top while the chocolate is still melted.
- Return the truffles to the fridge or freezer until ready to serve.
