Instructions
- Soak the dates in warm water to soften them.
- Blend pecans, oats, and coconut sugar until crumbly.
- Add the softened dates, vanilla, and salt, and blend until smooth.
- Pulse in the peanuts, keeping some chunks for crunch.
- Scoop the mixture and roll into 1-inch balls.
- Melt the chocolate in the microwave in 30-second intervals.
- Dip the truffles in chocolate and place them on a parchment-lined sheet.
- Refrigerate until the chocolate hardens.
