Ingredients

  • 20 pieces medjool dates
  • ¾ cup peanuts, raw
  • ¼ cup raw pecans
  • 2 tablespoons oats
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract
  • ¾ teaspoon sea salt
  • ¾ cup dark chocolate chips

Instructions

  1. Soak the dates in warm water to soften them.
  2. Blend pecans, oats, and coconut sugar until crumbly.
  3. Add the softened dates, vanilla, and salt, and blend until smooth.
  4. Pulse in the peanuts, keeping some chunks for crunch.
  5. Scoop the mixture and roll into 1-inch balls.
  6. Melt the chocolate in the microwave in 30-second intervals.
  7. Dip the truffles in chocolate and place them on a parchment-lined sheet.
  8. Refrigerate until the chocolate hardens.
