Instructions
- Combine the filling ingredients in a mixing bowl until blended.
- Divide the mixture and roll into 6 balls.
- Refrigerate the balls for 2 hours until firm.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Roll the chilled balls in the melted chocolate and place them on a wax paper-lined tray.
- Refrigerate the tray until the chocolate hardens before enjoying.
