Sugar Free Salted Peanut Butter Brownie Truffles

Ingredients

  • cups sugar free dark chocolate chips
  • cups blanched almond flour
  • ¼ cup cocoa powder
  • ½ cup sugar free syrup
  • ½ cup organic peanut butter
  • tsp vanilla extract
  • ¼ tsp fine sea salt
  • 1 Tbsp sugar free granulated sweetener
  • to taste none flaked sea salt for topping

Instructions

  1. Mix together chocolate chips, almond flour, cocoa powder, syrup, peanut butter, vanilla, sea salt, and optional sweetener in a large bowl.
  2. Scoop out portions of the mixture, roll into 1-inch balls, and place on a parchment-lined baking sheet.
  3. Freeze the balls for about 20 minutes until they harden slightly.
  4. Melt 1 cup of chocolate chips with 1 tsp of coconut oil using a double boiler.
  5. Dip each ball in the melted chocolate and place back on the baking sheet.
  6. Sprinkle flaked sea salt on top while the chocolate is still soft.
  7. Refrigerate for about 30 minutes until the chocolate hardens completely.
  8. Enjoy and store in the refrigerator for up to a week.
