Instructions
- Process the rolled oats in a food processor until finely ground.
- Add peanut butter, honey, and sea salt, and process until a sticky batter forms.
- Optionally, pulse in the shelled nuts for added texture.
- Scoop the dough with a tablespoon and roll into balls.
- Place the balls on a lined plate or baking sheet and refrigerate or freeze to set.
- For the chocolate coating, melt chocolate chips and coconut oil in a double boiler.
- Spoon melted chocolate over the peanut butter balls.
- Sprinkle with coarse sea salt if desired and refrigerate to set.
