Ingredients

The truffles

  • 1 cup raw pecans
  • cup collagen peptides
  • 12 pieces medjool dates, pitted
  • 1 tsp pure vanilla
  • tsp salt

The chocolate drizzle

  • 2 Tbsp dairy-free chocolate chips
  • ¼ tsp coconut oil

For topping

  • to taste extra sea salt
  • to taste chopped pecans

Instructions

  1. Combine pecans, collagen peptides, dates, vanilla, and sea salt in a food processor and blend until the mixture resembles coarse sand and sticks together.
  2. If the mixture is too dry, add a few drops of water; if too sticky, add more pecans or collagen.
  3. Roll the mixture into 12 balls, each about 1 tablespoon in size, and place them on a plate.
  4. Melt the chocolate chips and coconut oil together in a bowl, stirring until smooth.
  5. Drizzle the melted chocolate over each truffle and sprinkle with additional sea salt and chopped pecans if desired.
  6. Allow the chocolate to harden before storing the truffles in a lidded container.
